Summer is officially here. The summer solstice happened at 5:14 a.m. eastern time, June 21, 2022. Not a news flash. We knew summer had slithered in early.
For weeks now our bodies are soaking up the simmer of summer – high temperatures, heat advisories, humidity that makes it feel like walking is akin to wading through a vat of molasses, UV numbers in the extreme.
If there ever was a time for cold soup, this is it.
May I present Watermelon Gazpacho. Thank you to Kate S. for the recipe.
2 cups cubed watermelon
1 large tomato pureed
2 tablespoons minced red onion
½ cucumber, seeded, minced
1 teaspoon red wine vinegar
¼ cup olive oil
2 tablespoons minced fresh dill (more for garnish)
¼ cup crumbled feta cheese
In blender puree tomato and ½ of the watermelon
Pour in vinegar, oil, and pulse.
Add onion, cucumber, dill, and puree until smooth.
Pour in chilled bowls, sprinkle with dill, feta, and rest of the watermelon cubes.
Yum!
Even in the heat life carries on in my garden. Tadpoles hatch in the middle pond.
Water lilies bloom.
Pond lilies show their lovely faces.
An arbor arrives in a box and awaits its debut in the garden. That may take a while. To me the three most dreaded words in the English language are: some assembly required.
Summer - a time when I tend to wilt - so it is time for Wednesday Notes and myself to take a short break – a summer vacation.
I’ll be off the grid for the next month.
